When it’s cold outside and all you want to do is curl up on the couch with a warm blanket and with that warm blanket there is nothing better than comfort food.
When we think of comfort foods we misunderstand it to be a meal full of calories, and unhealthy fats and that is not the case. When choosing comfort foods, there are so many healthy options to pick from, and here is one of my favourites.
How it’s good for you.
Escarole is so low in calories, it’s packed with Vitamin A, Vitamin C, fibre, calcium and iron and white beans are also low in calories and full of iron, magnesium and folate.
The combination in this meal makes it all that more powerful when aiding in weight loss, and it’s so easy and quick to make.
Ingredients
4 cups of low sodium chicken or vegetable stock
2 cups of water
3 tablespoon of olive oil or grapeseed oil
1 teaspoon dried parsley
1 teaspoon of ground rosemary
2 bay leaves
2 cloves of garlic minced
1/2 large onion minced or coarsely chopped
1/2 teaspoon of Vegeta spice (optional)
1 can 540ml of cannellini beans – drained and rinsed
1/2 head of escarole (you can add more if you wish)
1 tablespoon to Parmigiano cheese – (optional)
Salt and Pepper to taste
How to prepare.
In a pot heat oil
Add chopped onions and saute for 1 – 2 minutes until the onions become clear in colour.
Add minced garlic – saute for 1 – 2 minutes.
Add parsley, ground rosemary and Vegeta spice (optional) – saute all together for another 1 – 2 minutes.
Add your chicken or vegetable broth.
Add your water.
Add your salt and pepper to the desired taste.
Add your bay leaves.
Let this all simmer for about 10 – 15 minutes.
Once it has simmered for 10 – 15 minutes add the drained and rinsed cannellini beans.
Add the coarsely chopped escarole.
Let simmer for another 10 minutes.
Plate, add your Parmigiano cheese and kick your feet up and enjoy.
