Caramelized Peppers and Onions.

A great way to eat healthy and cut calories.

This combo of caramelized peppers and onions is a hearty side dish that is so healthy and easy to make.  It can be used as a side to any meat or fish dish.  It can be part of an appetizer for an antipasto platter.

Or, you can turn it into a veggie sandwich for an easy summertime lunch.  Peppers are high in vitamin C and fibre, and peppers come in a wide variety of colours that can add a splash of colour to your dish.

Ingredients 

  • 4 – 6 peppers cut into wedges about an inch wide.  Tip: You can use any pepper you want Bell Peppers, Sheppards Peppers.
  • 4 tbsp of olive oil
  • 1 large onion sliced
  • 2 tbsp of parsley fresh or dried
  • 2 cloves of garlic
  • Salt and Pepper to taste

Directions 

  • In a hot pan add your olive oil  Tip: Make sure your peppers are dry of water before adding them to the hot pan.
  • Add the peppers
  • Add the onions
  • Add the garlic
  • Add the parsley
  • Add your salt and pepper
  • Let simmer for 30 minutes on medium to low heat mixing frequently and keeping an eye that you don’t burn them.

The best part is you can cook your peppers to your desired texture.   If you like your peppers more raw decrease the cooking time to 15 -20 minutes.  If you want a more cooked softer pepper increase your cooking time to 25 -30 minutes.
